For your mains, which are all marinated in advance in our secret rubs, choose your trio from pulled quarter of minted lamb, barbecued pork butt, Texan beef brisket, spicy Cajun chickens and Louisiana sticky pork ribs, and on the day, we’ll serve them with three scrumptious sauces, including a very hot pepper sauce, a smokey sweet barbecue glaze and a hickory bourbon barbecue sauce.
